How to make Pakki Chicken Dum Biryani

Chicken Dum Biryani
—the name is enough to make one's mouth moist and can't resist saying, "Mmm. But when it comes to making it, it would be better to make something else than it, but why so?

Biryani is something that requires an occasion to be eaten, or else you must leave the house to consume it, but why is so?

The most common response is that it takes time, a tiresome process, and a lot of skill to achieve that finger-licking taste. I'd say a massive no.

After reading this, you will also say the same, and trust me, by making it in this way, you will surely not regret it; in fact, you will definitely make it many times since it would be easy breezy for you. 

Here's the required list of ingredients:

2 glass of biryani long grain rice  ( 5 adults can easily enjoys it )

Onions 7 big size 

Tomatoes 5 medium size 

Potato 4

Green chillies 10 

Ginger garlic paste 2 teaspoon 

Red chilli powder 3 teaspoon 

Corriander powder 3 teaspoon 

Garam masala powder 2 teaspoon 

Yoghurt 

Coriander

Salt

Saffron , kewada  essence ,  mint leaves and food colors (optional )

Garam Masala for rice

Cardamom 3

Big cardamom 2 

Cinnamon 

Sahi zeera 1 teaspoon 

Bay leaf  1

Black pepper 7

Preparation Method :

First wash the rice properly and  keep it aside .
Take a large, heavy pot. Add 4 glasses of water, salt, oil, and all of the akha garam masala; if you add lemon, the rice will not hold together.



Let them all boil, and in the meantime, we'll make the Biryani gravy. To do this, slice all of the onions and cook them in oil till golden brown.

When finished, remove it from the vessel and let it cool in the air. Once finished, we must fry the potatoes. Cut the potatoes into halves. Allow them to fry in the same oil that we used for the onion. Allow them to develop a lovely brown hue

.  Once done, remove it from the saucepan and set aside.
After that, Marinate the chicken with yoghurt, red chilli powder, coriander powder, jeera powder, garam masala powder, salt, and tomato puree.

After you've mixed the chicken with these tasty ingredients, place it in the same oil you used for the onions and potatoes (I'd like to mention that you need 5 teaspoons of oil because the rest may be used in chicken or mutton gravies later). Now, gently cook the entire thing in a pot until oil appears on top of your gravy. By the time your water for the rice is likewise well boiling, once done, simply add the rice and do not cover the lid , allow the rice to cook for about 85% of the time before rinsing it with cold water. Once finished, it's layering time !

Layering the Biryani :

Take a heavy pot and put some rice in it, then add fried potatoes and crushed fried onions, and then add our delicious heart of our dish- lovely gravy , and then layer it with rice again. You can add food colours like green or orange (optional), or you can use saffron milk to enhance its taste, and finally, add a spoonful of desi ghee.Finally, sprinkle it with coriander, mint leaves, kewada essence and the remaining fried onions. Cover the pot with a lid to keep air out.  and then its time for dum!

 Dum it for 15 minutes in low flame. Remember to spray some water for the finest dum!
 After all, all you need to do is "just eat and get lost in the regal flavours".
