Stir-Fried Dried Shrimp with Spring Onion

Dried shrimp and spring onion cheer, a dish you’ll hold dear!

 

One of my favorites is dried shrimp Kanda Bhaji, a staple food in the coastal regions of India. It's a side dish that pairs wonderfully with rice, chapati, or bhakri. Trust me, you'll want to make it twice or thrice a week after tasting this delight!


Ingredients:


  • 100g dried shrimp

  • 4 large onions, chopped

  • 2 medium tomatoes, quartered

  • 5 green chillies, halved

  • 10 spring onion, chopped

  • 1 tsp turmeric powder

  • 2 tsp coriander powder

  • 1 tsp cumin powder

  • Salt to taste (around 2 tsp)

  • 4 tsp oil

Preparation Method:

  1. Heat the oil in a pot and add the chopped onions. Fry until they turn golden brown.

  2. Add the green chillies and fry with the onions for another minute.

  3. Add the tomatoes and stir well, fry for another minute."

  4. Mix in the turmeric, coriander, and cumin powders . Stir well and fry until the oil separates from the masala.

  5. Now, add the dried shrimp and spring onion , stir properly. Add 1/4 glass of water and let it cook for 5 minutes

  6. Check the cooked shrimp to ensure all the flavors have infused together.

  7. Serve hot with masala rice, chapati, bhakri, or roti. Enjoy, and get ready for loads of appreciation!

Tips for a Perfect Stir-Fried Dried Shrimp with Spring Onion Recipe
  • Soak the Shrimp: Before cooking, clean the dried shrimp by rinsing them at least three times with water. Then, soak them in warm water for about 5 minutes to rehydrate and remove excess salt.
  • Onion Leaves: Many people add onion leaves with the onions, but this can cause them to lose their flavor through overcooking. Add the onion leaves later in the cooking process to keep the taste of Kanda Bhaji intact.
