As I am non-vegetarian, I love to eat my Maoor Pulao with boiled eggs, but for the vegans, they can have it as it is since its taste is impeccable!

The best thing about Masoor Pulav is that it is just so hassle-free, and you don't need any new ingredients from the store. 

The entire Masur Pulao recipe is complete with all the basic ingredients, which are readily available in everyone's kitchen.

Masur Pulao recipe is not only delicious but nutritious too, as masoor daal is high in protein, fiber, and essential vitamins and minerals. 

This is one of the greatest and most nutritious options for vegans. 

This high-protein diet is one of the favorites in various regions of my country, particularly North India. 

The use of spices and cooking methods evolved, influenced by Mughal cuisine and regional cooking traditions.

I generally make it at my family gatherings, or like on holidays or at dinner when everyone is at home to enjoy it hot and fresh, as it brings joy and increases the taste like in tenfold!

The list of ingredients you need for this recipe is not long. 

INGREDIENTS:

  • Onions, 5 medium size 
  • Tomato 3 medium size 
  • Potato 4 medium size
  • Whole red lentils 100g 
  • Green chilies 7 
  • Ginger garlic paste 2 tsp 
  • Rice 2 glasses
  • Coriander and kasuri methi for garnishing 
  • salt 3 tsp
  • Oil 5 tsp
  • Lemon 1 
  • Whole Garam Masala: Bay leaf 1, cumin 1 tsp, big and small cardamom 2-2 each, small cinnamon stick, 5 cloves, black pepper 
  • Powdered spices: cumin powder 1 tsp, coriander powder 2 tsp, turmeric powder 1 tsp, and garam masala powder 1 tsp

 

STEP-BY-STEP GUIDE FOR MAKING PERFECT WHOLE RED LENTIL PULAO:

Chop the onions and take a heavy-bottomed pot, add oil and whole garam masala, and put it on low flame; then add chopped onions and green chilies cut into halves and add salt with it so that the onions get cooked quickly.

Let the onions fry well into it till it becomes golden brown, then add ginger garlic paste and let it fry for a minute in it,

and then add whole red lentils to the mixture, let it fry in it for a minute, and then add tomatoes and potatoes along with powdered masalas like coriander, cumin, turmeric, and garam masala powder.

Let the entire mixture cook for 2-3 minutes in a medium flame with a lid on. 

Soak the rice after washing it thrice in clean water for 2 minutes. 

Meanwhile, open the lid and stir the gravy well. Once you see the oil is on the top of the gravy, it means the entire mixture has been cooked well and the tastes have been infused in the gravy. Well, then add 3 glasses of water in the pot.

Add rice after it and then squeeze a lemon and chop the coriander and kasuri methi on the top of it. 

Let the rice cook well in the pot for about 5 minutes, keeping the flame high. 

After 5 minutes, check the rice by stirring it and then put the flame on low. 

Cover the lid and let the rice soak up the remaining water and get cooked properly and evenly.

  • Spice Tempering: Sauté whole spices (like bay leaves, cloves, and cardamom) in hot oil before adding onions. This enhances the flavor of the oil, which will subsequently flavor the dish.
  • Balancing Flavors: Adjust the spice levels according to your preference. If you like it spicier, consider adding more green chilies.
  • Water Ratio: For 1 glass of rice, add 1.5 glasses of water; this is the thumb rule of cooking perfect rice. 
  • Resting Period: This is called dum in Hindi, as this phase helps to cook the rice perfectly and evenly. After cooking the pulao, let it sit covered for 5-10 minutes before fluffing. This allows the rice to absorb any remaining moisture. 
  • Garnishes: Top the finished pulao with fried onions, fresh coriander, and mint leaves for texture and freshness.
