INTRODUCTION

SHEERKHURMA...UMMM... Eid is not Eid without this sweet, simple dessert. Sheerkhurma shows the simplicity of this beautiful and peaceful festival, as there is no sound and extravagance, only sweetness and kindness to each and every person.

Be a Hindu, Muslim, Christian, or any other religion; no doubt everyone loves Eid's Sheerkhurma... 

I remember when I was young, my mother made sheerkhurma and shared it with our non-Muslim neighbor first. She knew they were waiting for this yummy dessert on this auspicious occasion, and Alhamdulillah, till date she is doing the same thing. Her recipe for sheerkhurmaaa is the yummiest of all types and variations I have eaten so far, and I prepare it in the same way. 

My friends, my husband's colleagues, and relatives demand it even after 2-3 days of Eid. You can easily find this dessert throughout the week of Eid in my home. 

Sharing the bowl of Sheerkhurma with our neighbors, friends, and family builds the bond stronger. But I wonder how this bowl holds so much happiness in it.

It's the simplest and easiest of all the desserts but holds so much flavor of happiness in it. 

Let's get to know how this tasty sweetness is made. 

The ingredients are fewer, simpler, and easier to find. 

DETAILED INGREDIENTS:

Dairy products: milk (half liter), desi ghee (3 tsp), and mava/khoya/evaporated milk solids (100 g) 

Ghee-roasted sevaiya: a handful. If not available, take any other vermicelli and roast it in desi ghee very well. (Always remember to roast it on a slow flame, and don't be in haste by cooking it on a fast flame; it may cause the vermicelli to burn.)

Sugar, 3 tsp. Instead of it, you can also use sugar-free sweetener of the same quantity for diabetic people.

Nuts: almonds, cashews, pistachios, and raisins or any other dried fruits of your choice for garnishing

Saffron, edible silver paper, and rose petals. rose water/kewada water or elaichi powder and nutmeg powder to enhance the flavor, texture, and aroma of the dessert 

COOKING PROCESS:

To prepare the milk, begin by pouring half a liter into a heavy-bottomed pot. Place it over medium heat and bring it to a gentle boil. Allow the milk to simmer for about 10 minutes, stirring occasionally to prevent it from scorching. This process will help thicken the milk slightly, enhancing its richness and texture. Once done, remove it from the heat and set it aside to cool before using it in your recipe.

After that, add the ghee-roasted sevaiya (vermicelli) to the cooled milk. Mix it well to combine thoroughly.

Meanwhile, take a small vessel, add ghee to it, and once it becomes properly roasted, add chopped dry fruits into the ghee. Stir until they are lightly golden and fragrant.

Add these roasted dry fruits along with the ghee into the milk mixture, followed by mava (khoya) and sugar. Stir well to ensure that the mava and sugar dissolve completely.

Then, add saffron strands, elaichi (cardamom) powder, and nutmeg powder to bring out a beautiful aroma.

Let the mixture cook properly, stirring continuously for another 10 minutes until it thickens slightly and the flavors meld.
