Dried Bombil and Potato Recipe | Konkan-Style Sukha Bombil in 10 Minutes
Dried Bombil is quite popular throughout Maharashtra. In every Maharashtrian house (non-vegetarian), you will find at least one or two lovers of this fish. Bombil is more abundant during certain seasons, which affects when it's dried and sold. It’s often more commonly available during the monsoon months. So basically, Bombil (Bombay Duck) is cleaned, salted, and sundried in order to enhance the flavor and increase the shelf life of the fish. Once adequately dried, the bombil can be stored in a cool, dry place, or it may be vacuum-sealed to retain its flavor and texture. Proper storage is crucial to prevent spoilage.Dried bombil has a strong umami flavor and a chewy texture. When rehydrated, it becomes softer.It's high in protein and essential nutrients, making it a nutritious addition to meals. It’s also low in fat if prepared healthily. In Mumbai and the Konkan region, dried bombil is a traditional ingredient in many recipes and is cherished for its distinct taste.It contains essential vitamins and minerals, including omega-3 fatty acids, vitamin B12, and iron. Being low in fat contributes to its appeal as a healthier choice compared to some other processed snacks or meat options.
There are numerous recipes for dried bombil, but this recipe is my all-time favorite. I love bombil (Bombay duck); in fact, my siblings also love this dish greatly, especially my younger sister. Whenever Ammi brings dried bombil, she asks her to make a dried bombil and potato recipe with khichdi. In my home everyone enjoys this recipe with khichdi and even with dal chawal.
So today I am going to share my mother's recipe, and my favorite since childhood is the dried bombil and potato recipe.
Its simplest and quickest recipe of the fish you can make lets say in 10 minutes and enjoy with chapati, bhakri, rice, or with khichdi.
During my gestation period, I asked my mumma to make this recipe countless times for me, as I had a huge craving for this particular recipe.

Ingredients required are not so many.
INGREDIENT LISTS:
- Dried Bombil (Bombay Duck) Fish 7-8
- Onions, 4 medium size
- Potato 2 medium size
- Tomato 1 medium size
- Green chilies 3
- Powdered spices: coriander, cumin, turmeric powder
- Salt
- Oil
STEP-BY-STEP PROCESS OF MAKING DRIED BOMBIL AND POTATO:
Wash the fish and keep it in water for rehydration for 5 minutes.
Take a pan and add oil to it. Put the chopped onions and green chilies cut in half; add the bombil and let it fry in the oil with the onions and chilies.
Once the onion turns golden brown in color, add tomatoes and potatoes cut into cubes and let them fry in it.
Add powdered spices such as turmeric, coriander, cumin powder, and salt.
Mix it well and then add chopped coriander.
Keep it in the pan with the lid covered for 5 minutes on a low flame, checking in between by stirring so it doesn't get sticky.
Once the potatoes are cooked well, the fish masala is ready to be served with chapati, bhakri, rice, or with my favorite pair, khichdi!

TIPS FOR PERFECT DRIED BOMBIL AND POTATO RECIPE:
Rehydrating the Fish: Soak the fish for 5-10 minutes to remove excess salt and enhance the flavor, and it becomes soft and easy to handle while cooking.
Use less oil: Use just enough oil to sauté the onions and fish without making the dish overly greasy. Let's say 3 tablespoons of oil should be sufficient.
Customizing Spices: Feel free to adjust the amount of spices based on your taste preferences. Add a pinch of red chili powder for extra heat if desired.
Covering the Pan: Covering the pan while cooking allows steam to circulate, which helps cook the potatoes faster and keeps the fish moist. Add a little water if it's sticking.
Stirring: Stir the mixture occasionally so it doesn’t stick to the bottom of the pan, allowing everything to cook evenly.
Following these tips will help you make a delicious and satisfying dried bombil and potato dish, ensuring it’s flavorful and enjoyed by everyone at the table!
